Can you believe that the summer is almost done? I can. The weather here has been unbelievably chilly for this time of year. Fall is-a-comin’ and to be honest
And now that the summer is coming to an end, I am looking forward to settling back into life in Belgium with J in our cozy little apartment together. In celebration of summertime, summer nights and the sizzling summer heat (which I never seem to get enough of) I am sharing with you one of my favourite Mango Banana “ice cream” recipes. I discovered banana ‘ice cream’ at the beginning of the summertime and quickly looked forward to this ice cold & naturally sweetened treat after a long run or day in the summer heat.
This Mango Banana Coconut Ice Cream could not be easier to throw together: the nutrient-rich frozen mango and bananas are magically processed into a soft serve ice cream that could easily compete with the “real thing” without the addition of traditional addition of cream, sugar and eggs. This refreshing creamy mango and banana dream is made even creamier and tastier with the addition of light coconut milk and a splash of vanilla for good measure.
And no need to worry, this Mango Banana Coconut Ice Cream does not require an ice cream maker. I have made this dish in both the food processor and with a hand held blender – making this soft serve perfect for those who do not have space for extra kitchen appliances like ice cream machines. One taste of this Mango Banana Coconut Soft Serve and you may never buy store bought ice cream again 😉
Just make sure to eat it quickly or else you might end up with a Mango Banana Coconut milkshake – no complaints here 😉
Is risotto a regular in your home? Even since I posted my Red Pepper Risotto last Winter, risotto has been one of my go-to meals. It’s easy to whip up, comes together in one pot, versatile, tasty, healthy and everybody always goes crazy for its naturally creamayyyy texture.
Baked Vegan Avocado Fries. Ripe, sliced avocado is tossed in a flavorful bread crumb mixture and baked until golden brown and crispy. These healthy fries make the perfect appetizer dipped in my Smokey Tangy Avocado Dip.
After a bright, hot and beautiful summer, lately in Belgium, it has been a bit dark, dreary and rainy! In lieu of this cold weather I thought I would whip up one of my favourite soups! Pumpkin soup is soo good for you, filling and flavourful! It is the perfect pick me up in the…
Happy Easter friends! How was your Easter weekend? Okay, so maybe Vegan Rose Pasta is not really that Easter friendly but when you are a vegetarian/vegan you tend to break all the food rules for holidays anyways. Like eating Mac + Cheese with Christmas dinner because… why not? What did you eat for Easter dinner? J and…
I love everything about chocolate. The richness, the wonderful taste and the ways it melts in my mouth. So coincidentally when I moved to Belgium I entered into the land of chocolate. High-end delicious chocolate is never far away for a moment of sheer, blissful, beautiful indulgence! One of the best parts…
Oh my goodness guys. This Healthy Oil Free Zucchini is the best. thing. ever. I mean look at those gorgeous green speckles of zucchini sprinkled throughout the bread and those beautiful creases drawn out across the top of the loaf. I am in L O V E.
