Can you believe that the summer is almost done? I can. The weather here has been unbelievably chilly for this time of year. Fall is-a-comin’ and to be honest
And now that the summer is coming to an end, I am looking forward to settling back into life in Belgium with J in our cozy little apartment together. In celebration of summertime, summer nights and the sizzling summer heat (which I never seem to get enough of) I am sharing with you one of my favourite Mango Banana “ice cream” recipes. I discovered banana ‘ice cream’ at the beginning of the summertime and quickly looked forward to this ice cold & naturally sweetened treat after a long run or day in the summer heat.
This Mango Banana Coconut Ice Cream could not be easier to throw together: the nutrient-rich frozen mango and bananas are magically processed into a soft serve ice cream that could easily compete with the “real thing” without the addition of traditional addition of cream, sugar and eggs. This refreshing creamy mango and banana dream is made even creamier and tastier with the addition of light coconut milk and a splash of vanilla for good measure.
And no need to worry, this Mango Banana Coconut Ice Cream does not require an ice cream maker. I have made this dish in both the food processor and with a hand held blender – making this soft serve perfect for those who do not have space for extra kitchen appliances like ice cream machines. One taste of this Mango Banana Coconut Soft Serve and you may never buy store bought ice cream again 😉
Just make sure to eat it quickly or else you might end up with a Mango Banana Coconut milkshake – no complaints here 😉
Pesto is one of my favourites and I am always looking for ways to make it lighter, more nutritious, and tastier – let’s just say this Roasted Broccoli Vegan Pesto exceeded my expectations. The roasted broccoli adds a dimension to this pesto that is unmistakably flavourful, slightly nutty as well as contrasting the taste of the fresh…
Refreshing, bright and tangy Avocado Cucumber Salad. Ready in less than 10 minutes with a simple lemon-lime, cilantro dressing. As soon as the weather starts warming up, my body starts to craveeeeee salads.
To mushroom or not to mushroom? I know mushrooms are a sensitive topic with a lot of people – you either LOVE or hate them. Half of the people in my family love mushrooms and the other half can’t stand them. Thankfully J loves mushrooms just as much as I do because they are one…
A bit of magic happened with this nut butter. The nuts turned and turned in the food processor until they finally formed a smooth, creamy and yummy butter. I encourage you to eat it by the spoonful pre or post workout or to enjoy it on some pumpkin banana bread for a great energy-boosting snack! This…
Soft, creamy, spreadable, Nut Free Vegan Cream Cheese made with only SIX ingredients (+ salt and pepper) you probably have at home RIGHT NOW. No funny stuff. I know I need to but I still haven’t bought half the ingredients needed to make all the fancy-schmancy vegan cheese out there… yet.
Vegan Parmesan made with a handful of ingredients in less than five minutes. I always make sure to have some of this savory parmesan on hand to sprinkle on pasta, potatoes, and use as a topping for casseroles.
