Can you believe that the summer is almost done? I can. The weather here has been unbelievably chilly for this time of year. Fall is-a-comin’ and to be honest
And now that the summer is coming to an end, I am looking forward to settling back into life in Belgium with J in our cozy little apartment together. In celebration of summertime, summer nights and the sizzling summer heat (which I never seem to get enough of) I am sharing with you one of my favourite Mango Banana “ice cream” recipes. I discovered banana ‘ice cream’ at the beginning of the summertime and quickly looked forward to this ice cold & naturally sweetened treat after a long run or day in the summer heat.
This Mango Banana Coconut Ice Cream could not be easier to throw together: the nutrient-rich frozen mango and bananas are magically processed into a soft serve ice cream that could easily compete with the “real thing” without the addition of traditional addition of cream, sugar and eggs. This refreshing creamy mango and banana dream is made even creamier and tastier with the addition of light coconut milk and a splash of vanilla for good measure.
And no need to worry, this Mango Banana Coconut Ice Cream does not require an ice cream maker. I have made this dish in both the food processor and with a hand held blender – making this soft serve perfect for those who do not have space for extra kitchen appliances like ice cream machines. One taste of this Mango Banana Coconut Soft Serve and you may never buy store bought ice cream again 😉
Just make sure to eat it quickly or else you might end up with a Mango Banana Coconut milkshake – no complaints here 😉
Okay, another mushroom recipe?! Seriously guys, I can’t help it. I’m mushroom o-b-s-e-s-s-e-d! I made these Vegan Stuffed Mushrooms last week for a fun family appy and we ate these tender and juicy mushrooms up in seconds! These Vegan Stuffed Mushrooms are pretty simple to whip up, use the entire mushroom (no wasting the stems here!)…
Refreshing, bright and tangy Avocado Cucumber Salad. Ready in less than 10 minutes with a simple lemon-lime, cilantro dressing. As soon as the weather starts warming up, my body starts to craveeeeee salads.
If a brownie and a coconut macaroon made a baby they would taste exactly like this. My friend’s birthday is this week and she invited some people over for a night out! I remembered she loved the combo of chocolate and peanut butter in Reese’s peanut butter cups … so I decided to combine these…
Welcome to Ceara’s Kitchen 2.0! I am super excited to launch the latest Ceara’s Kitchen today – the switch from Blogger to WordPress is one I have been meaning to do for awhile and is well worth it. I am a big fan of WordPress so far – it is faster than Blogger, easier to navigate and…
Some weeks you just need a good piece of of soft, chocolatey, slightly sweet, and decadent Vegan Chocolate Banana Bread. This week is one of those weeks and this cake bread has filled the Healthy Vegan Chocolate Banana Bread void in my life quite perfectly. The real reason I need this in my life is because over these past…
