Dry Ingredients
- 1 and 1/2 cups shredded coconut (unsweetened)
- 1/4 cup oats (quick oats – small ones) *make sure to get gluten-free oats if needed
- 7 tbsp cocoa powder
- 1/2 teaspoon sea salt
“Wet” Ingredients
- 4 heaping tbsp peanut butter
- 4 tbsp maple syrup or honey
- 1 tbsp coconut oil
- 1/2 cup milk of choice (I used cashew, but coconut milk would taste great in these)
- splash vanilla (optional)
Instructions
- Pre-heat oven to 325ΒΊf or 160ΒΊc.
- Put dry ingredients in a medium size bowl. Mix.
- Put wet ingredients in a small bowl. Microwave for about 45 seconds to a minute. Take the bowl out of the microwave and mix together with a spoon until all the ingredients (including the peanut butter) are melted and creamy.
- Add wet mixture to the dry ingredients. Mix the dry and the wet together until you form a ball with the dough.
- Place macaroons by heaping teaspoon onto onto lightly oiled cookie sheet.
- Flatten cookies out slightly with your palm.
- Bake for eleven minutes.
- Voila! Enjoy!
